Enjoy this homemade Phirni in honor of Eid al-Adha

Phirni is a sweet milk-based dessert served chilled and made with coarsely ground basmati rice and flavored with rose water, saffron and ground cardamom. Afterwards you decorate it with chopped or ground almonds or pistachio nuts. Chopped fruits can be a choice as well.

Here’s how to begin!

Ingredients (1 cup = 250 ML)
  • 2 tbsp basmati rice
  • water for soaking
  • 1 litre milk full cream
  • ¼ cup sugar
  • ¼ tsp cardamom powder / elachi powder
  • 2 tbsp saffron milk
  • a few dry fruits chopped
  1. Soak 2 tbsp of basmati rice for 30 minutes.
  2. Discard the water and blend rice to coarse paste. keep aside.
  3. In a large kadai boil 1 liter milk.
  4. Stir occasionally, and simmer for 10 minutes.
  5. Keep the flame on low or till milk thickens.
  6. Add in prepared coarse rice paste.
  7. Stir continuously for 5 minutes so lumps don’t form.
  8. Simmer for another 5 minutes stirring in between.
  9. Boil the milk till the rice is cooked completely.
  10. Further add ¼ cup of sugar and 2 tbsp saffron milk.
  11. Mix well till the milk thickens and turn creamy.
  12. Add in cardamom powder and mix well.
Finally, serve chilled phirni garnished with few chopped nuts.
